I love this recipe because it is very tasty and it has great health benefits.
Zucchini Beef Bake
3 medium zucchini, grated or chopped
1 lb ground beef
1 small onion
1 ˝ cups sliced mushrooms
2 Tbsp. olive oil
2 cups tomato juice or sauce
˝ tsp. oregano
˝ tsp. salt
˝ tsp. basil
1 green pepper, diced
2 cups shredded cheese
In a large pan, brown ground beef with the onion. In a separate pan sauté the mushrooms and grated zucchini in the olive oil until tender. Add tomato sauce and seasoning to ground beef. Layer one-half of each of the above mixtures, along with the diced green pepper and one cup of cheese in a 13 x 9 inch pan. Then add the top layers using the other half of the ground beef mixture and the zucchini/mushroom mixture. Bake in a 350 oven for 30 Minutes – uncovered. Take out and add the other cup of shredded cheese and bake 5 more minutes or until cheese is melted.
